  • Pork Tenderloin (or boneless chicken thighs)1 1/2 lbs
  • French Baguettes2
  • Carrots, julienned2 medium
  • Daikon Radish, julienned (or more carrots)1/2 cup
  • Rice Vinegar1/2 cup
  • English Cucumber, sliced thin1
  • Mayonnaise1/2 cup
  • Sriracha, to taste (optional)1 tbsp
  • Soy Sauce2 tbsp
  • Fresh Cilantro, for topping (optional)1/2 cup

Method

    Make the quick pickles first. Julienne or grate carrots and daikon. Combine rice vinegar, sugar, and salt in a bowl. Add carrots and daikon, toss, and let sit at least 20 minutes (or up to a day ahead).

    Slice pork tenderloin or chicken thighs thin. Season with garlic, soy sauce, a little sugar, and black pepper. Marinate 10 minutes.

    Cook protein in a hot oiled skillet or under the broiler until cooked through and slightly caramelized, about 8-10 minutes.

    Make Sriracha mayo: stir mayo with Sriracha to taste.

    Slice baguettes into sandwich-sized pieces and toast under the broiler 2-3 minutes cut-side up.

    Set out all components in separate bowls. Each person builds their own: bread, protein, pickled veggies, cucumber, cilantro, and sauce.
