Method

Marinate chicken thighs with minced lemongrass, fish sauce, sugar, garlic, shallots, and turmeric for 15 minutes.

Heat oil in a skillet over medium-high heat. Sear chicken for 5 minutes per side until golden and caramelized.

Add a splash of water, cover, and cook 8-10 minutes until chicken is cooked through and sauce is thick.
