  • Fresh Ginger1 inch

Method

    Cut potatoes into 1-inch cubes and cauliflower into small florets. Set aside.

    Heat oil in a large skillet over medium heat. Add cumin seeds and let them splutter. Add diced onion and cook until light golden.

    Add ginger, turmeric, coriander, and chili powder. Stir for 30 seconds until fragrant.

    Add potatoes and cauliflower. Toss to coat with spices. Cover and cook on medium-low for 20 minutes, stirring every 5 minutes, until vegetables are tender.

    Finish with a squeeze of lemon juice and garnish with cilantro. Serve with roti or as a side dish.
