- Large Flour Tortillas (10-inch)8 tortillas
- Boneless Skinless Chicken Breast1 lb
- Shredded Mexican Blend Cheese2 cups
- Black Beans (canned)15 oz can
- Bell Pepper (optional)1
- Ground Cumin1 tsp
- Chili Powder1 tsp
- Sour Cream1/2 cup
- Salsa1/2 cup
- Fresh Cilantro (optional)1/4 cup
Method

Cook chicken breast in a skillet with cumin, chili powder, and salt. Shred with two forks when cooked through.

Prep fillings: drain and rinse black beans, dice bell peppers, and chop fresh cilantro.

Set up an assembly station: tortillas, shredded cheese, shredded chicken, beans, peppers, and other fillings.

Let each person fill half a tortilla with their chosen fillings and fold in half.

Cook quesadillas in a skillet over medium heat, 2-3 minutes per side until golden and cheese is melted. Work in batches.

Cut into wedges and serve with salsa, sour cream, and guacamole on the side.
