Ingredients

  • Large Flour Tortillas (10-inch)8 tortillas
  • Boneless Skinless Chicken Breast1 lb
  • Shredded Mexican Blend Cheese2 cups
  • Black Beans (canned)15 oz can
  • Bell Pepper (optional)1
  • Ground Cumin1 tsp
  • Chili Powder1 tsp
  • Sour Cream1/2 cup
  • Salsa1/2 cup
  • Fresh Cilantro (optional)1/4 cup

Method

  1. 01

    Cook chicken breast in a skillet with cumin, chili powder, and salt. Shred with two forks when cooked through.

    Prep fillings: drain and rinse black beans, dice bell peppers, and chop fresh cilantro.

    Set up an assembly station: tortillas, shredded cheese, shredded chicken, beans, peppers, and other fillings.

    Let each person fill half a tortilla with their chosen fillings and fold in half.

    Cook quesadillas in a skillet over medium heat, 2-3 minutes per side until golden and cheese is melted. Work in batches.
