  • Large Flour Tortillas (10-inch)4
  • Butternut Squash, peeled and cubed2 cups
  • Cheddar Cheese, shredded6 oz
  • Ground Cumin1/2 tsp
  • Chili Powder1/4 tsp
  • Salt1/4 tsp
  • Salsa (optional)1/2 cup

Method

    Microwave cubed butternut squash with 2 tablespoons of water, covered, for 6-8 minutes until very soft. Mash with a fork until smooth. Season with cumin, salt, and a pinch of chili powder.

    Lay out 4 flour tortillas. Spread a thin layer of mashed squash on one half of each tortilla. Top with shredded cheese and fold in half.

    Heat a large skillet over medium heat. Cook quesadillas one or two at a time, 2-3 minutes per side, until tortilla is golden and cheese is melted.

    Cut each quesadilla into triangles and serve with salsa, sour cream, or guacamole.
