  • Coconut Milk1/2 can
  • Avocado1
  • Sour Cream1/4 cup
  • Lime1

Method

    Cook rice in coconut milk and water according to package directions.

    Heat black beans in a saucepan with cumin, garlic, and a pinch of salt.

    Slice ripe plantains on the diagonal. Fry in oil over medium-high heat until golden on each side, about 3 minutes per side.
