Ingredients

  • Canned Chickpeas (drained)30 oz
  • Yellow Onion1 large
  • Diced Tomatoes14 oz
  • Ginger-Garlic Paste1 tbsp
  • Vegetable Oil2 tbsp
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Amchur (Dried Mango Powder)1 tsp
  • Lemon1
  • Fresh Cilantro (optional)1/4 cup

Method

  1. 01

    Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle for 30 seconds.

    Add diced onion and cook until golden brown, about 8 minutes. Stir in ginger-garlic paste, coriander, cumin powder, turmeric, and chili powder. Cook 1 minute.

    Add diced tomatoes, amchur (dried mango powder), and salt. Cook until tomatoes break down, about 5 minutes.

    Add drained chickpeas and 1 cup water. Bring to a boil, then reduce heat and simmer for 15 minutes until sauce thickens.

    Finish with a squeeze of lemon juice and garnish with cilantro. Serve with rice or roti.
