- Niter Kibbeh (Spiced Butter)3 tbsp

- Lemon1

Method

Dice 3 large onions and cook in a dry pot over medium heat, stirring often, until deeply browned and reduced, about 15 minutes.

Add niter kibbeh and berbere spice, stir for 2 minutes until fragrant.

Score chicken legs, season with lemon juice and salt, then nestle into the sauce.

Cover and simmer on low for 45 minutes, turning chicken halfway through.

Add peeled hard-boiled eggs in the last 10 minutes. Serve over injera or rice.
