  • Lean Beef (top round)1 1/2 lbs
  • Niter Kibbeh (Spiced Butter)3 tbsp
  • Mitmita Spice1 tbsp
  • Ground Cardamom1/4 tsp
  • Cottage Cheese (Ayib) (optional)1/2 cup
  • Salt1/2 tsp

Method

  1. 01

    Mince lean beef very finely with a sharp knife until almost paste-like.

    Warm niter kibbeh in a skillet over low heat until just melted.

  3. 03

    Toss the minced beef with warm niter kibbeh and mitmita spice. For leb leb (lightly cooked), briefly warm the mixture in the skillet for 2-3 minutes.

    Serve immediately with fresh ayib (cottage cheese) and gomen (collard greens) on the side.
