Ingredients
- Day-Old Cooked Rice4 cups
- Shelled Edamame1 cup
- Eggs3
- Corn Kernels1/2 cup
- Soy Sauce2 tbsp
- Sesame Oil1 tbsp
- Garlic Cloves (minced)2 cloves
- Scallions3 stalks
Method

Heat oil in a wok over high heat. Scramble eggs and break into small pieces. Set aside.

Stir-fry garlic for 30 seconds, then add cold rice. Toss and press against the wok for 3-4 minutes until rice is hot and slightly crispy.

Add edamame, corn, soy sauce, and sesame oil. Toss to combine and cook 2 more minutes.

Return scrambled eggs to the wok. Garnish with scallions and sesame seeds. Serve immediately.
