- Salmon Fillets4 6-oz pieces
- White or Yellow Miso Paste3 tbsp
- Mirin2 tbsp
- Sake2 tbsp
- Sugar1 tbsp
- Green Onions3 stalks
- Sesame Seeds1 tbsp
- Steamed Bok Choy or Edamame, to Serve1 serving
Method

Whisk together miso, mirin, sake, and sugar until smooth.

Pat salmon dry. Brush generously with miso glaze on both sides. Marinate 15–30 minutes if time allows (or cook immediately).

Heat a non-stick or cast-iron pan over medium-high. Cook salmon skin-side down 4–5 minutes without moving.

Flip carefully. Cook 3–4 minutes more, or until glaze is caramelized and salmon just flakes. Watch closely — miso can burn.

Garnish with green onions and sesame seeds. Serve with steamed rice and bok choy.
