Ingredients

  • Beef Sirloin1 1/2 lbs
  • Red Onion1 large
  • Roma Tomatoes3
  • Soy Sauce3 tbsp
  • Red Wine Vinegar2 tbsp
  • Aji Amarillo Paste (optional)1 tbsp
  • French Fries (frozen)2 cups
  • Fresh Cilantro1/4 cup
  • Vegetable Oil2 tbsp

Method

  1. 01

    Cut sirloin into thick strips. Season with salt, pepper, and cumin.

  2. 02

    Heat oil in a wok or large skillet over very high heat. Sear beef in batches until browned but still pink inside. Remove.

  3. 03

    In the same pan, stir-fry sliced onion and tomato wedges for 2 minutes.

    Return beef, add soy sauce, vinegar, and aji amarillo paste. Toss for 1 minute.

    Fold in hot french fries and cilantro. Serve immediately alongside steamed rice.
