- Crushed Tomatoes1 can

- Ground Cumin1 tsp
- Olive Oil2 tbsp
- Bay Leaf1
Method

Place flank steak in a pot with water, bay leaf, and a halved onion. Boil, then simmer 1.5 hours until very tender.

Remove beef and shred with two forks into thin strands. Reserve 1 cup of the broth.

In a large skillet, sautee sliced bell peppers and onion in olive oil until soft. Add garlic and cumin.

Add crushed tomatoes, reserved broth, olives, and capers. Simmer 10 minutes.

Add shredded beef, stir to coat, and cook 15 more minutes. Serve over white rice with black beans.
