  • Zucchini1 medium, sliced into half-moons
  • Red Bell Pepper1 large, sliced

  • Neutral Oil1 tbsp

Method

    Cook jasmine rice according to package directions.

    Cut chicken breasts into 1-inch pieces. Season lightly with salt.

    Heat oil in a large deep skillet or Dutch oven over medium heat. Add 1 tablespoon green curry paste and cook, stirring, for 1 minute until fragrant.

    Pour in coconut milk and stir to combine with the curry paste.

    Add chicken broth, fish sauce, and brown sugar. Stir.

    Add chicken pieces and bring to a gentle simmer. Cook 8 minutes until chicken is cooked through.
