Ingredients
- Boneless Chicken Thighs2 lbs
- Yellow Onion1 large
- Garlic Cloves4 cloves
- Preserved Lemon1 medium
- Green Olives1/2 cup
- Chicken Broth1 1/2 cups
- Ground Cumin1 tsp
- Ground Turmeric1/2 tsp
- Couscous1 1/2 cups
- Fresh Cilantro (optional)1/4 cup
Method

Season chicken thighs with cumin, turmeric, ginger, cinnamon, salt, and pepper. Brown in olive oil in a large pot, then remove.

Sauté diced onion until soft. Add garlic, then stir in the remaining spice blend and tomato paste.

Return chicken to pot. Add chicken broth, chopped preserved lemon, and green olives.

Cover and simmer for 35-40 minutes until chicken is tender and sauce has thickened.

Garnish with fresh cilantro. Serve over couscous or with warm flatbread.
