  • Large Shrimp (peeled, deveined)1 lbs

Method

    Soak rice noodles in warm water for 20 minutes until pliable, then drain.

    Whisk together tamarind paste, fish sauce, sugar, and lime juice for the sauce.

    Stir-fry shrimp in oil over high heat until pink, about 2 minutes. Push to the side and scramble eggs in the same pan.

    Add drained noodles and sauce. Toss constantly for 3-4 minutes until noodles absorb the sauce.
