Ingredients
- Beef Sirloin1 1/2 lbs
- Red Onion1 large
- Roma Tomatoes3 medium
- Soy Sauce3 tbsp
- Red Wine Vinegar2 tbsp
- Aji Amarillo Paste (optional)1 tbsp
- White Rice2 cups
- Frozen French Fries1 lb
- Vegetable Oil2 tbsp
- Fresh Cilantro (optional)1/4 cup
Method

Cut sirloin into strips. Season with salt, pepper, and cumin. Slice onion into wedges and cut tomatoes into wedges.

Heat oil in a wok or large skillet over very high heat. Sear beef strips in batches until browned but still pink inside. Remove.

In the same pan, stir-fry onion wedges for 2 minutes. Add tomato wedges, soy sauce, and vinegar. Cook 1 minute.

Return beef to pan. Add aji amarillo paste and toss everything together for 30 seconds.

Serve over white rice with crispy french fries mixed in or on the side. Garnish with fresh cilantro.
