- Russet Potatoes1 1/2 lbs
- Frozen Green Peas1 cup
- Vegetable Oil2 tbsp
- Cumin Seeds1 tsp
- Mustard Seeds1/2 tsp
- Fresh Ginger1 inch
- Amchur (Dried Mango Powder)1 tsp
- Tamarind Chutney4 tbsp
- Sev (Crispy Chickpea Noodles) (optional)1/2 cup
Method

Boil potatoes until fork-tender, about 15 minutes. Drain, peel, and roughly mash, keeping some chunks.

Heat oil in a skillet. Add cumin seeds and mustard seeds, let them pop. Add minced ginger and green chili, cook 30 seconds.

Add mashed potatoes, frozen peas, turmeric, coriander, amchur, and salt. Stir-fry for 5 minutes until heated through and well combined.

Serve in bowls topped with tamarind chutney, dahi (yogurt), sev (crispy noodles), and fresh cilantro.
