- Cooked Jasmine Rice4 cups
- Chicken Thighs, Boneless1 lb
- Thai Basil1 cup packed
- Thai Chili2 small
- Garlic4 cloves
- Soy Sauce2 tbsp
- Fish Sauce1 tbsp
- Oyster Sauce1 tbsp
- Eggs4 large
- Vegetable Oil3 tbsp
Method

Use day-old rice. Mince chicken into small pieces.

Heat 2 tbsp oil in a wok over very high heat. Stir-fry chicken 3 minutes.

Add garlic and chilies, stir 30 seconds. Add rice, pressing flat. Fry 2 minutes.

Add soy sauce, fish sauce, and oyster sauce. Toss to combine. Fold in Thai basil.

Fry eggs sunny-side up in remaining oil. Serve rice topped with fried egg.
