  • Flour Tortillas4 large
  • Shredded Mexican Cheese Blend2 cups
  • Black Beans, Canned1 can (15 oz)
  • Corn, Frozen1/2 cup
  • Bell Pepper1 medium diced
  • Red Onion1/4 cup diced
  • Cumin1/2 tsp
  • Salsa1/2 cup for serving
  • Sour Cream1/4 cup for serving

Method

    Drain and rinse black beans. Thaw corn.

    Mix beans, corn, diced pepper, onion, cumin, and half the cheese.

    Spread filling on half of each tortilla. Fold over.

    Cook in a dry skillet or griddle over medium heat 3 minutes per side until golden and cheese melts.

    Cut into wedges. Serve with salsa and sour cream.
