  • Large Russet Potatoes4
  • Olive Oil1 tbsp
  • Bacon6 slices
  • Shredded Cheddar Cheese1 1/2 cups
  • Sour Cream1/2 cup
  • Butter4 tbsp
  • Broccoli Florets2 cups
  • Fresh Chives (optional)2 tbsp chopped

Method

    Preheat oven to 400F. Scrub potatoes, poke several times with a fork, and rub with olive oil and salt.

    Place potatoes directly on the oven rack. Bake 50-60 minutes until fork-tender.

    While potatoes bake, cook bacon in a skillet until crispy. Crumble and set aside.

    Steam broccoli florets until tender-crisp, about 4 minutes.

    Prep remaining toppings: shred cheese, chop chives, portion sour cream and butter.
