Method

Heat olive oil in a large pot over medium heat. Cook diced onion and bell pepper until softened, about 5 minutes.

Add garlic, cumin, smoked paprika, and oregano. Cook 1 minute, stirring constantly.

Add black beans (with their liquid), chicken or vegetable broth, and bay leaf. Stir.

Bring to a boil, reduce heat, and simmer 20 minutes.

Use a potato masher or immersion blender to partially mash about a third of the beans, creating a thick and creamy texture while keeping chunks.
