Method

  1. 01

    Dice potatoes into 1/2-inch cubes. Heat olive oil in a large skillet over medium-high heat. Add potatoes, season with salt, pepper, and garlic powder. Cook 15-18 minutes, stirring occasionally, until golden and tender.

    While potatoes cook, brown sausage in a separate pan, breaking into crumbles. Drain excess fat. Transfer to a bowl.

    Beat eggs with salt and pepper. Scramble in butter over medium-low heat until just set. Remove from heat.

    Warm tortillas in the oven (wrapped in foil at 350°F for 5 minutes) or one at a time in a dry skillet.

    Set out all components and toppings in separate bowls. Let each person build their own burrito.
