- Butter1 tbsp
- Shredded Cheddar Cheese1 cup
- Large Flour Tortillas (10-inch)4 tortillas
- Salsa (your family's favorite)1/2 cup
- Sour Cream (optional)1/4 cup
Method

Warm tortillas directly over a gas burner or in a dry skillet, 30 seconds per side. Wrap in a towel to keep warm.

Crack eggs into a bowl with a pinch of salt. Whisk well.

Melt butter in a nonstick pan over medium-low heat. Add eggs.

Stir eggs slowly and constantly with a spatula, scraping the bottom of the pan. Cook 3-4 minutes until soft and just barely set. Remove from heat.

Stir in shredded cheddar off heat and let it melt into the eggs.

Spoon eggs into warm tortillas. Add salsa and sour cream if using. Fold and serve immediately.
