Method

Combine soy sauce, vinegar, garlic, bay leaves, peppercorns, and brown sugar in a bowl.

Place chicken thighs in a pot. Pour the adobo sauce over the chicken.

Bring to a boil, then reduce to a simmer. Cover and cook for 30 minutes, turning chicken halfway through.

Remove lid and increase heat. Cook 10 more minutes until sauce thickens and chicken is glazed.
