- Boneless Skinless Chicken Thighs1 1/2 lbs
- Olive Oil2 tbsp
- Yellow Onion, diced1 medium
- Carrots, diced3 medium
- Celery, diced2 stalks
- Garlic, minced3 cloves
- All-Purpose Flour3 tbsp
- Chicken Broth4 cups
- Dried Thyme1 tsp
- Bay Leaf1 leaf
- All-Purpose Flour (for dumplings)1 1/2 cups
- Baking Powder2 tsp
- Whole Milk3/4 cup
- Butter, melted2 tbsp
- Frozen Peas1 cup

Season chicken thighs with salt and pepper. In a large Dutch oven, heat oil over medium-high heat. Sear chicken on both sides until golden, about 3 minutes per side. Remove and set aside.

Add diced onion, carrots, and celery to the pot. Cook until softened, about 5 minutes. Stir in garlic and cook 30 seconds.

Sprinkle flour over vegetables and stir for 1 minute. Gradually pour in chicken broth, scraping up browned bits. Add thyme and bay leaf.

Return chicken to pot. Bring to a simmer, cover, and cook 20 minutes until chicken is cooked through. Remove chicken, shred with two forks, and return to pot.

Make dumplings: whisk flour, baking powder, and salt. Stir in milk and melted butter until just combined (do not overmix).

Drop dumpling batter by spoonfuls onto the simmering stew. Cover and cook 15 minutes without lifting the lid. Stir in frozen peas, season to taste, and serve.
