Ingredients
- Boneless Skinless Chicken Breast, diced1 lb
- Long Grain White Rice1 1/2 cups
- Broccoli Florets3 cups
- Olive Oil1 tbsp
- Butter3 tbsp
- All-Purpose Flour3 tbsp
- Chicken Broth1 cup
- Whole Milk1 cup
- Sharp Cheddar Cheese, shredded2 cups
- Garlic Powder1 tsp
Method

Preheat oven to 375°F. Cook rice according to package directions. Steam or blanch broccoli florets until just tender, about 3 minutes. Drain.

Season diced chicken breast with salt, pepper, and garlic powder. In a skillet, heat oil over medium-high heat and cook chicken until golden and cooked through, about 6 minutes. Set aside.

In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in chicken broth and milk. Cook until thickened, about 4 minutes.

Remove from heat and stir in 1.5 cups cheddar until melted. Season with salt and pepper.

In a large bowl, combine rice, broccoli, chicken, and cheese sauce. Transfer to a greased 9x13 baking dish. Top with remaining cheddar.
