Ingredients
- Bone-In Skin-On Chicken Thighs4 pieces
- Olive Oil1 tbsp
- White Mushrooms, sliced8 oz
- Yellow Onion, diced1 medium
- Garlic, minced3 cloves
- Long Grain White Rice1 1/2 cups
- Chicken Broth1 1/2 cups
- Cream of Mushroom Soup10 1/2 oz can
- Dried Thyme1 tsp
- Garlic Powder1 tsp
- Onion Powder1/2 tsp
Method

Preheat oven to 375°F. Season chicken thighs with salt, pepper, garlic powder, and onion powder.

In an oven-safe skillet, heat oil over medium-high heat. Sear chicken skin-side down for 4 minutes until golden. Flip briefly and remove.

In the same skillet, sauté sliced mushrooms and diced onion until softened, about 4 minutes. Add garlic and cook 30 seconds.

Add rice and stir to coat in the drippings. Pour in chicken broth, cream of mushroom soup, and dried thyme. Stir to combine.

Nestle chicken thighs on top of the rice, skin-side up. Cover tightly with foil.

Bake covered for 35 minutes. Remove foil and bake 10 more minutes until rice is tender and chicken skin is crispy. Let rest 5 minutes.
