Ingredients
- Wide Egg Noodles12 oz
- Rotisserie Chicken, shredded2 1/2 cups
- Butter3 tbsp
- Yellow Onion, diced1 medium
- Carrots, diced2 medium
- Celery, diced2 stalks
- Garlic, minced2 cloves
- All-Purpose Flour3 tbsp
- Chicken Broth1 1/2 cups
- Whole Milk1 cup
- Sharp Cheddar Cheese, shredded1 cup
- Frozen Peas1 cup
- Ritz Crackers1 sleeve (about 30 crackers)
- Butter, melted (for topping)2 tbsp
Method

Preheat oven to 375°F. Cook egg noodles in salted boiling water until al dente. Drain.

In a large skillet, melt butter over medium heat. Add diced onion, carrots, and celery. Cook until softened, about 5 minutes. Add garlic and cook 30 seconds.

Sprinkle flour over vegetables and stir 1 minute. Gradually whisk in chicken broth and milk. Cook, stirring, until thickened, about 4 minutes.

Remove from heat. Stir in cheddar until melted. Fold in shredded rotisserie chicken, cooked noodles, frozen peas, salt, and pepper.

Transfer to a greased 9x13 dish. Crush Ritz crackers and toss with melted butter. Scatter over the top.

Bake 25 minutes until bubbly and the cracker topping is golden. Let rest 5 minutes.
