- Ziti Pasta16 oz
- Olive Oil2 tbsp
- Garlic, minced4 cloves
- Sun-Dried Tomatoes (oil-packed), chopped1/2 cup
- Heavy Cream1 cup
- Chicken Broth1/2 cup
- Parmesan Cheese, grated1/2 cup
- Italian Seasoning1 tsp
- Baby Spinach4 cups
- Mozzarella Cheese, shredded1 1/2 cups
Method

Preheat oven to 375°F. Cook ziti in salted boiling water until just barely al dente. Drain.

In a large skillet over medium heat, heat olive oil. Add garlic and cook 30 seconds. Add chopped sun-dried tomatoes and cook 1 minute.

Pour in heavy cream and chicken broth. Bring to a gentle simmer. Stir in parmesan and Italian seasoning. Cook 3 minutes until slightly thickened.

Add baby spinach in handfuls, stirring until wilted. Season with salt and pepper.

Fold in cooked ziti. Transfer to a greased 9x13 baking dish. Top with shredded mozzarella.
