Ingredients

  • Chickpeas, Canned2 cans (15 oz)
  • Fresh Parsley1/2 cup
  • Fresh Cilantro1/4 cup
  • Garlic3 cloves
  • Cumin1 1/2 tsp
  • Flour2 tbsp
  • Hummus1 cup
  • Cucumber1 medium
  • Cherry Tomatoes1 cup
  • Red Onion1/2 small
  • Lemon1 medium
  • Olive Oil3 tbsp
  • Pita Bread4 rounds

Method

    Preheat oven to 375F. Drain chickpeas and pat very dry.

    Pulse chickpeas, parsley, cilantro, garlic, cumin, flour, salt, and pepper in a food processor until coarsely ground (not a paste).

    Form into 16 small patties. Place on an oiled baking sheet. Brush tops with olive oil.

    Bake 25 minutes, flipping halfway, until golden and crispy.

    Dice cucumber and tomatoes for a quick tabbouleh. Dress with lemon juice and olive oil.

    Serve falafel over hummus with tabbouleh, pickled onion, and warm pita.
