Ingredients

  • Chicken Thighs, Boneless, Cubed1 1/2 lbs
  • Cornstarch1/2 cup
  • Eggs2 large
  • Soy Sauce3 tbsp (sauce)
  • Hoisin Sauce3 tbsp (sauce)
  • Rice Vinegar2 tbsp (sauce)
  • Sugar3 tbsp (sauce)
  • Garlic3 cloves
  • Fresh Ginger1 tsp
  • Dried Red Chiles4
  • Sesame Seeds1 tbsp
  • Green Onions4 stalks
  • Vegetable Oil for Frying2 cups

Method

  1. 01

    Toss chicken in beaten eggs, then cornstarch mixed with 1/2 tsp salt and pepper. Coat well.

    Make sauce: whisk together soy sauce, hoisin, rice vinegar, sugar, garlic, and ginger. Set aside.

    Heat 1 inch oil to 375°F in a heavy pot. Fry chicken pieces in batches 4–5 minutes until deep golden and crispy. Drain on paper towels.

    In a wok over medium-high, toast dried chiles in 1 tbsp oil 1 minute. Add sauce and bring to a simmer.

    Add fried chicken, toss to coat in sauce. Serve over rice, garnished with sesame seeds and green onions.
