Ingredients
- Large Shrimp, Peeled and Deveined1 lb
- Cooked Jasmine Rice (day-old)4 cups
- Eggs2 large
- Frozen Peas and Carrots1 1/2 cups
- Soy Sauce3 tbsp
- Sesame Oil1 tbsp
- Garlic2 cloves
- Green Onions4 stalks
- Vegetable Oil3 tbsp
Method
- 01
Heat wok over very high heat until smoking. Add 1 tbsp oil, cook shrimp 1–2 minutes per side until pink. Remove.

Add 1 tbsp oil, push rice to sides, crack eggs into center, scramble, then mix into rice.

Add peas and carrots, stir-fry 2 minutes. Add garlic, cook 30 seconds.

Return shrimp. Add soy sauce and sesame oil, toss everything over max heat 2 minutes.

Garnish with green onions. Serve hot.
