Ingredients

  • Large Shrimp, Peeled and Deveined1 lb
  • Cooked Jasmine Rice (day-old)4 cups
  • Eggs2 large
  • Frozen Peas and Carrots1 1/2 cups
  • Soy Sauce3 tbsp
  • Sesame Oil1 tbsp
  • Garlic2 cloves
  • Green Onions4 stalks
  • Vegetable Oil3 tbsp

Method

  1. 01

    Heat wok over very high heat until smoking. Add 1 tbsp oil, cook shrimp 1–2 minutes per side until pink. Remove.

    Add 1 tbsp oil, push rice to sides, crack eggs into center, scramble, then mix into rice.

  3. 03

    Add peas and carrots, stir-fry 2 minutes. Add garlic, cook 30 seconds.

    Return shrimp. Add soy sauce and sesame oil, toss everything over max heat 2 minutes.

    Garnish with green onions. Serve hot.
