  • Boneless Skinless Chicken Breasts1 1/2 lb
  • Butter, Softened3 tbsp
  • Olive Oil1 tbsp
  • Garlic, Minced2 cloves
  • Dried Parsley1 tsp
  • Dried Thyme1/2 tsp
  • Salt3/4 tsp
  • Black Pepper1/2 tsp

Method

  1. 01

    Butterfly thick chicken breasts or pound to even 3/4-inch thickness. Season both sides with salt and pepper.

    Heat olive oil in a large skillet over medium-high heat. Sear chicken 6-7 minutes per side until golden and internal temp reaches 165F.

    While chicken cooks, mash softened butter with minced garlic, dried parsley, dried thyme, and a pinch of salt.

  4. 04

    Place a tablespoon of herb butter on each chicken breast as soon as it comes off the heat. Let rest 5 minutes so the butter melts over the chicken.
