- Boneless Skinless Chicken Breasts1 1/2 lb
- Butter, Softened3 tbsp
- Olive Oil1 tbsp
- Garlic, Minced2 cloves
- Dried Parsley1 tsp
- Dried Thyme1/2 tsp
- Salt3/4 tsp
- Black Pepper1/2 tsp
Method

Butterfly thick chicken breasts or pound to even 3/4-inch thickness. Season both sides with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Sear chicken 6-7 minutes per side until golden and internal temp reaches 165F.

While chicken cooks, mash softened butter with minced garlic, dried parsley, dried thyme, and a pinch of salt.

Place a tablespoon of herb butter on each chicken breast as soon as it comes off the heat. Let rest 5 minutes so the butter melts over the chicken.
