  • Cooked Beets (packaged or roasted)8 oz
  • All-Purpose Flour1 1/4 cups

  • Buttermilk1/2 cup

Method

    Preheat oven to 350F. Grease and flour a 9-inch round cake pan.

    If using raw beets: wrap in foil and roast at 400F for 45-50 minutes until tender. Cool, peel, and puree in a blender until smooth. (Or use pre-cooked packaged beets and just blend.)

    In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.

    In a separate bowl, combine beet puree, eggs, oil, vanilla, and buttermilk. Whisk until smooth.
