Method

Blend baby spinach with milk in a blender until completely smooth and bright green.

In a large bowl, whisk together flour, sugar, baking powder, and salt. Make a well in the center.

Pour the green milk mixture into the dry ingredients. Add the egg and melted butter. Stir until just combined (some lumps are OK).

Heat a griddle or large skillet over medium heat. Lightly grease with butter. Pour 1/4 cup batter per pancake. Cook until bubbles form on top and edges set, about 2-3 minutes. Flip and cook 1-2 minutes more.
