  • Spaghetti12 oz
  • Crushed Tomatoes (28 oz can)28 oz
  • Carrots, peeled and diced2
  • Zucchini, diced1
  • Red Bell Pepper, diced1
  • Yellow Onion, diced1
  • Garlic, minced3 cloves
  • Olive Oil2 tbsp
  • Italian Seasoning1 tsp
  • Sugar1 tsp
  • Salt1 tsp

Method

  1. 01

    Heat olive oil in a large pot over medium heat. Add diced onion and cook until soft, about 4 minutes.

    Add diced carrots, zucchini, and bell pepper. Cook, stirring occasionally, until vegetables are tender, about 8 minutes.

    Add garlic and cook 1 minute until fragrant. Pour in crushed tomatoes, add Italian seasoning, sugar, salt, and pepper. Simmer for 15 minutes.

    Use an immersion blender (or transfer to a regular blender in batches) and puree until completely smooth.

    Cook spaghetti according to package directions. Toss with sauce and serve with parmesan.
