- Yellow Onion (grated)1/2 medium

- Ground Coriander1 tsp
- Ground Cinnamon1/4 tsp

Method

Combine ground lamb, grated onion, minced garlic, cumin, coriander, paprika, cinnamon, chopped parsley, and salt in a bowl. Mix until just combined.

Form mixture into 12 oval-shaped kofta, about 2 inches long. Thread onto skewers or shape into patties.

Heat a grill pan or skillet over medium-high heat with a drizzle of olive oil. Cook kofta for 3-4 minutes per side until charred and cooked through.

Serve kofta with warm pita, tzatziki, sliced tomato, red onion, and a squeeze of lemon.
