Ingredients
- Elbow Macaroni16 oz
- Thick-Cut Bacon8 slices
- Butter3 tbsp
- All-Purpose Flour3 tbsp
- Whole Milk2 1/2 cups
- Sharp Cheddar Cheese, shredded3 cups
- Sour Cream1/2 cup
- Fresh Chives, chopped (optional)2 tbsp
Method

Preheat oven to 375°F. Cook elbow macaroni in salted boiling water until al dente. Drain and set aside.

Cook bacon in a skillet over medium heat until crispy. Transfer to paper towels and crumble when cool.

In a large saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in milk and cook until thickened, about 4 minutes.

Remove from heat. Stir in shredded cheddar, sour cream, salt, and pepper until smooth. Fold in cooked macaroni and half the crumbled bacon.

Transfer to a greased 9x13 baking dish. Top with remaining bacon and a sprinkle of extra cheddar.

Bake uncovered for 20 minutes until bubbly and golden on top. Let rest 5 minutes. Garnish with chives.
