Method

Beat eggs with a splash of milk, salt, and pepper in a bowl.

Heat butter in a large skillet over medium heat. Add bell pepper and mushrooms. Cook 4-5 minutes until softened.

Add spinach. Stir until wilted, about 1 minute.

Pour eggs over the vegetables. Cook over medium-low heat, stirring gently with a spatula, folding from the edges toward the center. Remove from heat when eggs are almost set but still look slightly wet.
