  • Ground Pork3/4 lbs
  • Cooked Jasmine Rice (day-old)4 cups
  • Pineapple Chunks1 cup
  • Eggs2 large
  • Soy Sauce3 tbsp
  • Fish Sauce1 tbsp
  • Cashews1/2 cup
  • Green Onions4 stalks
  • Vegetable Oil2 tbsp

Method

  1. 01

    Heat wok over high heat. Cook ground pork, breaking up, until cooked through. Remove.

    Add oil, scramble eggs, then push aside. Add rice and stir-fry 3 minutes until slightly crispy.

    Return pork. Add pineapple, soy sauce, and fish sauce. Toss 2 minutes over high heat.

    Top with cashews and green onions. Serve hot.
