- Yukon Gold Potatoes1 1/2 lb
- Yellow Onion1
- Olive Oil2 tbsp
- Paprika1 tsp
- Garlic Powder1/2 tsp
- Salt1/2 tsp
- Black Pepper1/4 tsp
Method

Dice potatoes into 1/2-inch cubes. Slice sausage into 1/4-inch rounds. Dice onion.

Heat olive oil in a large skillet over medium-high heat. Add potatoes in a single layer. Cook 10 minutes, stirring occasionally, until starting to brown.

Add sausage and onion. Cook 8 minutes, stirring occasionally, until sausage is browned and potatoes are tender.

Season with paprika, garlic powder, salt, and pepper. Stir and cook 2 more minutes.
