- Eggs2 large
- Whole Milk1 1/4 cups
- Butter, melted2 tbsp
- Deli Ham8 oz
- Swiss Cheese6 slices
- Baby Spinach (optional)1 cup
Method

Blend flour, eggs, milk, butter, and a pinch of salt until smooth, about 30 seconds. Let the batter rest 5 minutes.

Heat a 10-inch nonstick skillet over medium heat. Brush lightly with butter.

Pour 1/4 cup batter into the pan, immediately tilting and swirling to coat the bottom in a thin layer.

Cook 60-90 seconds until the edges look dry and the bottom is lightly golden. Flip and cook 30 seconds more.

Repeat with remaining batter. Stack crepes on a plate as you go.

Fill each crepe with 1-2 slices ham, a slice of Swiss cheese, and a few spinach leaves. Fold into quarters.

Return filled crepes to the pan 1 minute per side to melt the cheese. Serve immediately.
