- Whole Chicken (about 4 lbs)4 lb

- Lemon1

Method

Preheat oven to 425F. Pat the chicken completely dry inside and out with paper towels.

Rub softened butter all over the chicken. Season generously with salt, pepper, and garlic powder. Place lemon halves inside the cavity.

Place chicken breast-side up in a roasting pan or cast iron skillet. Tuck wing tips under.

Roast 55-65 minutes until thigh reaches 165F and juices run clear. If skin is browning too fast, tent with foil.
