Dice potatoes into 1/2-inch cubes.

Heat oil in a 12-inch cast iron skillet over medium-high heat. Add potatoes in a single layer. Season with salt, pepper, garlic powder, and smoked paprika. Do not stir for 5 minutes.

Stir and continue cooking 8-10 more minutes, stirring every few minutes, until potatoes are golden and crispy.

Add diced onion and bell pepper. Cook 5 minutes until softened.

Create 4 wells in the hash. Crack an egg into each well. Season egg yolks with salt.
