Ingredients
- Beef Chuck Roast, Cubed 1-inch2 1/2 lbs
- Yukon Gold Potatoes1 lb, cubed
- Carrots3 large, chunked
- Celery3 stalks, sliced
- Onion1 large, diced
- Garlic4 cloves
- Beef Broth2 cups
- Tomato Paste2 tbsp
- Worcestershire Sauce1 tbsp
- Cornstarch2 tbsp
- Dried Thyme and Rosemary1 tsp each
- Olive Oil2 tbsp
Method
- 01
Season beef with salt and pepper. Sear in batches in hot olive oil in a skillet, 2 minutes per side. Transfer to slow cooker.

Add vegetables, garlic, broth, tomato paste, Worcestershire, thyme, and rosemary to slow cooker. Stir to combine.

Cook on LOW 8–10 hours or HIGH 5–6 hours until beef is very tender.

30 minutes before serving: mix cornstarch with 2 tbsp cold water. Stir into stew. Cook on HIGH 20–30 minutes until gravy thickens.
