Slow Cooker White Bean Chicken Stew
Chicken thighs, white beans, tomatoes, spinach, and Italian herbs slow-cooked until the chicken is fall-apart tender and the broth is rich. Everything goes in the slow cooker in 10 minutes. Method

Place chicken thighs in the slow cooker.

Add white beans (drained), diced tomatoes, chicken broth, diced onion, garlic, Italian seasoning, and salt. Stir.

Cook on LOW 6-7 hours or HIGH 3-4 hours.

Remove chicken. Shred with two forks and return to the pot.

Stir in baby spinach. Cover for 5 minutes until wilted.
