Classic Spaghetti Bolognese

Ingredients

  • Ground Beef (80/20)3/4 lbs
  • Ground Pork1/2 lbs
  • Spaghetti1 lb
  • Canned Crushed Tomatoes28 oz
  • Tomato Paste2 tbsp
  • Onion1 medium
  • Carrots2 medium
  • Celery2 stalks
  • Garlic4 cloves
  • Dry Red Wine1/2 cup
  • Whole Milk1/4 cup
  • Olive Oil2 tbsp
  • Parmesan1/2 cup grated, to serve

Method

  1. 01

    Heat olive oil in a heavy pot over medium. Cook onion, carrot, and celery (soffritto) until very soft, about 8 minutes. Add garlic, cook 1 minute.

    Add ground beef and pork. Cook, breaking up, until no longer pink and beginning to brown, about 10 minutes.

    Add tomato paste, cook 2 minutes. Pour in wine and simmer 3 minutes until mostly absorbed.

    Add crushed tomatoes and milk. Season generously with salt and pepper. Bring to a simmer, then reduce heat to low and cook uncovered 25–30 minutes, stirring occasionally.

    Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.

    Toss pasta with sauce, adding pasta water as needed for silky consistency. Serve with parmesan.
