- Bell Peppers (mixed Colors)4 large
- Ground Turkey1 lb
- Cooked Rice1 1/2 cups
- Diced Tomatoes, Canned1 can (14 oz)
- Shredded Cheddar Cheese1 cup
- Onion1/2 medium
- Garlic2 cloves
- Cumin1 tsp
- Chili Powder1/2 tsp
- Olive Oil1 tbsp
Method

Preheat oven to 375F. Cut tops off peppers and remove seeds. Stand upright in a baking dish.

Cook onion and garlic in oil 3 minutes. Add turkey, cook 5 minutes until browned.

Stir in rice, diced tomatoes, cumin, chili powder, salt, and half the cheese.

Fill peppers with turkey mixture. Top with remaining cheese. Add 1/4 cup water to the dish.

Cover with foil. Bake 25 minutes. Uncover and bake 5 more minutes until cheese is bubbly.
