  • Bell Peppers (mixed Colors)4 large
  • Ground Turkey1 lb
  • Cooked Rice1 1/2 cups
  • Diced Tomatoes, Canned1 can (14 oz)
  • Shredded Cheddar Cheese1 cup
  • Onion1/2 medium
  • Garlic2 cloves
  • Cumin1 tsp
  • Chili Powder1/2 tsp
  • Olive Oil1 tbsp

Method

  1. 01

    Preheat oven to 375F. Cut tops off peppers and remove seeds. Stand upright in a baking dish.

    Cook onion and garlic in oil 3 minutes. Add turkey, cook 5 minutes until browned.

    Stir in rice, diced tomatoes, cumin, chili powder, salt, and half the cheese.

  4. 04

    Fill peppers with turkey mixture. Top with remaining cheese. Add 1/4 cup water to the dish.

    Cover with foil. Bake 25 minutes. Uncover and bake 5 more minutes until cheese is bubbly.
