- Large Sweet Potatoes4

- Black Beans (canned)15 oz can
- Shredded Cheddar Cheese1 cup
- Sour Cream1/2 cup
- Green Onions3 stalks
- Chili Powder1 tsp
- Ground Cumin1/2 tsp
- Olive Oil1 tbsp
- Salsa (optional)1/2 cup
Method

Preheat oven to 400F. Scrub sweet potatoes, poke with a fork, and rub with olive oil and salt.

Place on a foil-lined baking sheet. Bake 45-50 minutes until very tender when pierced.

While potatoes bake, brown ground turkey in a skillet with chili powder and cumin. Add black beans in the last 2 minutes.
